This Denver restaurant serves the most authentic Italian meal | Opinion

Published Fri, 21 Feb 2025 18:06:59 GMT

Editor’s note: This is part of The Know’s series, Staff Favorites. Each week, we offer our opinions on the best that Colorado has to offer for dining, shopping, entertainment, outdoor activities and more. (We’ll also let you in on some hidden gems). After visiting the motherland of wine, pasta and pizza a couple of weeks ago, I have a new perspective on Italian food.Unlike in the U.S., restaurants in Positano and Rome they don’t overload you with heaping portions of pasta.Cleaning your plate with bread is a requirement, and chefs are offended if you don’t.Fettuccine Alfredo, if even on a menu at all, definitely doesn’t have any cream in it.The quality of a red sauce is dependent on the quality of the tomatoes, and if you’re lucky enough, make sure to try some real San Marzano tomatoes, grown in the volcanic soil near Mount Vesuvius.Related ArticlesRestaurants, Food and Drink | 7 Denver chefs to watch right now Restaurants, Food and Drink | 11 bucket-l...

Keep rolling with the punches, J.T. Compher. The Avalanche’s second-line center does everything that feels important to this series right now. He’s on the top power play unit; Colorado is 0 for 7 through three games. He kills penalties; down 1-0 in Game 3, he scored a crucial short-handed goal. He leads the team in faceoffs taken; the Avs have scored three important goals in the last two games off draws. And Compher is involved in all that while dealing with a revolving door of linemates. The latest twist was Matt Nieto joining him on the second line with Valeri Nichushkin out. With no timeta...

California’s native poppy is lovely, and so are these others, too

1. Worm castings are recommended for control of insect pests on plants. The reason for this is that worm castings contain an enzyme known as chitinase that breaks down chitin, the major constituent in the exoskeleton of many insects, including whiteflies, aphids, and leaf miners, as well as spider mites. You can purchase worm castings (a euphemism for worm poop) by the bag or bring red wigglers into your life for a constant supply of their excretions. Keep your worms fed with vegetable and fruit peels, coffee grounds, egg shells, tea bags, and shredded newspapers. You can find bins and trays for growing red wigglers through a multitude of Internet vendors when you search “make your own worm castings.”  YouTube videos also instruct how – for a minimal investment – you can construct your own apparatus for growing worms and harvesting their castings. 2. You may be wondering about growing vegetables in containers and which types are most suited to this option. Fast-growing vegetables ar...
